The Ubiquitous Green Bean Casserole

The recipe calls for 4 cups cooked cut green beans, probably meaning fresh, but c'mon, everyone knows you use those canned, French cut green beans. 2 cans should do it.

Keto Green Bean Casserole

If you're trying to be careful and stay away from carbs and such, like we're supposed to be doing. Emphasis on supposed to be, this is a pretty good recipe. The mushroom soup is replaced with cheese, glorious cheese. Also fresh sliced mushrooms, and a toping of sliced onions sauteed in butter. Becasue, it's butter, people, and I'm from the Paula Deen school of a stick or two never hurt anybody.

Libby's Pumpkin Pie

Okay, so yeah, it's a pie recipe from a website, but it's sort of like those Ghiradelli triple chocolate brownie mixes you can get at the market. They're so good, why try to reinvent the wheel? I do make my own crust, and I've added that recipe too, but there's no reason you can't use a frozen or refrigerated one. The star is the pumpkin. And do not get pumkin pie mix, just pure pumpkin. I just gave you a link for a crust that's pretty much exactly the same as mine. I just urge you to make it a bit ahead and let it rest for at least half an hour to overnight in the fridge before trying to do anything with it. A good pie crust must be buttery, and worked while cold, or you'll get a dense and very unflaky result.

Keto Pumpkin Pie

Almond flour makes such a great crust, almost like a shortbread crust for things like lemon bars and berry bars. I found this recipe as I was searching around. I haven't tried it yet, but I figure I know what an almond flour crust is like, and the ingredients for the custard aren't that different than the regular version, just sweetened differently. SO...
